One Bowl Super Quick and Easy Brownies

With three young kids in the house Brownies are a must have. Though I don’t encourage the children to eat so much sugar but with all their activities they do need some sugar fixes. This recipe is a one bowl absolutely delicious, quick, no fail recipe. Made with pure chocolate it sure has a depth of flavour. When making for kids I use mix of milk chocolate and dark chocolate.

So if your kids come back from school and want something sweet after lunch this is the recipe to head for. Best thing is that it will make one pan and hence you can control how many helpings the kids will take. I’m sure all the mummies reading this will understand how difficult it is to stop the kids from taking the next helping. 

If you have a bigger family or more of a sweeter tooth double the recipe and make 2 batches. This will make 1 8×8 pan of brownies which you can cut into 9 larger square or 16 smaller squares. I personally go for 16 square to put a cap on the number of helpings my kids take. 

If serving for guests it works perfectly with vanilla ice cream. You may add some chocolate sauce on it for an indulgent dessert. 

Brownies

Ingredients

  • 85 g unsweetened chocolate, roughly chopped
  • 115 g unsalted butter
  • 265 g (1 1/3 cup) granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt 
  • 2 tbsp coca powder
  • 85 g (2/3 cup) all-purpose flour

Method:

  • Preheat the oven to 180C. 
  • Line an 8×8-inch square baking pan with parchment, extending it up two sides. Oil the parchment or spray with a nonstick cooking spray. I recommend using the paper as it helps lift the Brownies out of the pan really easily and there is less mess to clean up later.
  • In a steel bowl over boiling water, melt chocolate and butter together stir until smooth and fully melted. Be careful not to burn the chocolate. 
  • In chocolate whisk in the sugar. Mix to combine. 

  • In same bowl whisk in eggs, one at a time, then add the coca powder, vanilla and salt. 
  • Stir in flour with a spatula and scrape down the sides.

  • Pour the batter into prepared pan.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out batter-free.

  • Let it cool slightly in the pan and then move with the paper to rack to cool down completely. Cut into desired size. If you prefer dust the Brownies with powdered sugar. 


Only challenge is to find the courage not to eat one right out of the pan while it’s steaming hot… aha surly the smell is hard to resist and if I may add it tastes heavenly. 

To reduce my guilt I pair my brownie with a glass of milk. It sure makes it healthy. 😉

  1. This looks super easy and they look YUMMY and more importantly super easy to copy!

    Just one query, looks as though this mix is the same as cake mixture but brownies top shows cracks and cake top does not shows cracks like the brownies or reason being that both have different recipes and flour ratios.
